Definition of shelf life
: the length of time that food may be stored and still be good to eat
: the length of time during which something or someone lasts or remains popular
Shelf Life was a two-month restaurant project revolving all around the beauty of (and chemistry behind) preserved foods. During one month in late summer we bottled and jarred one ton of super-seasonal food using heat and cold, sugar and salt as well as bacteria and yeasts. In our restaurant we then combined and served our homemade preserves for lunch and dinner with fresh food available to us in fall, always served with a bit of science.
